Italy Part 19

Badger football is currently on and being an alumnus, I must make this entry short!

Minestrone with pesto (p. 104)

This hearty soup contains a long laundry list of ingredients that come together perfectly!
Borlotti beans (I substituted with pinto), olive oil, onion, garlic, pancetta,
celery, carrots, potato, tomatoes, basil, stock, zucchini, peas, green beans,
Swiss chard, parsley, and pasta! I prepared the homemade pesto
ahead of time and took it out of the freezer to thaw as the soup was simmering.

Panzanella (p. 103)
Saltimbocca (p. 124)

This tomato-bread salad is to die for!
Saltimbocca is a quick way to fix veal. Just slice the veal steaks thin,
rub each with salt, pepper, garlic, and top each with a slice of prosciutto and sage.
Marsala is added to its juices for reduction into a tasty sauce.
